Shrimp Scampi Zoodles

(Cooking for 1.)
TIPS: Buy fresh Parmesan and not the preshredded kind. They put a lot of starch in the preshredded kind and its not as good. Ive started buying my cheese from a nearby farmer's market and it is DEFINITELY worth it.
INGREDIENTS
1 medium zucchini
salt and pepper
1/2 tbsp butter
olive oil
1 clove minced garlic
splash of dry white wine
1/4 lb of raw shrimp
1/2 tbsp lemon juice
chopped fresh parsley
Parmesan cheese
lemon wedges for serving
DIRECTIONS
Using a spiralizer turn the zucchini into noodles
Place zucchini in a colander and sprinkle a bit of salt and let it sit for about 20-30 minutes (the salt will drain the zucchini of moisture
Squeeze the zucchini of any excess liquid and then pat dry with paper towels
Heat butter and a splash of olive oil on a skillet over high heat
Add garlic and cook, stirring, for 30 seconds
Add the wine and bring to a simmer
Add shrimp and cook until they are cooked through (about 1 1/2-2 minutes a side)
Remove shrimp from heat and add lemon juice, some parsley, and a pinch of salt and pepper - stir to combine and then transfer to a bowl and set aside
Heat the remaining oil in skillet over medium-high heat - add the zoodles and toss until hot (about 2-3 minutes)
Add shrimp mixture the the zucchini and toss to combine
Serve with some grated Parmesan cheese and a squeeze of lemon
