Shrimp Scampi Zoodles

(Cooking for 1.)

TIPS: Buy fresh Parmesan and not the preshredded kind. They put a lot of starch in the preshredded kind and its not as good. Ive started buying my cheese from a nearby farmer's market and it is DEFINITELY worth it.

  • 1 medium zucchini

  • salt and pepper

  • 1/2 tbsp butter

  • olive oil

  • 1 clove minced garlic

  • splash of dry white wine

  • 1/4 lb of raw shrimp

  • 1/2 tbsp lemon juice

  • chopped fresh parsley

  • Parmesan cheese

  • lemon wedges for serving

  1. Using a spiralizer turn the zucchini into noodles

  2. Place zucchini in a colander and sprinkle a bit of salt and let it sit for about 20-30 minutes (the salt will drain the zucchini of moisture

  3. Squeeze the zucchini of any excess liquid and then pat dry with paper towels

  4. Heat butter and a splash of olive oil on a skillet over high heat

  5. Add garlic and cook, stirring, for 30 seconds

  6. Add the wine and bring to a simmer

  7. Add shrimp and cook until they are cooked through (about 1 1/2-2 minutes a side)

  8. Remove shrimp from heat and add lemon juice, some parsley, and a pinch of salt and pepper - stir to combine and then transfer to a bowl and set aside

  9. Heat the remaining oil in skillet over medium-high heat - add the zoodles and toss until hot (about 2-3 minutes)

  10. Add shrimp mixture the the zucchini and toss to combine

  11. Serve with some grated Parmesan cheese and a squeeze of lemon
