Pineapple Shrimp Stir Fry

(Cooking for 1.)
TIPS:
INGREDIENTS
1 tbsp vegetable oil
1 small red onion (thinly sliced)
1 garlic glove, minced
2 tsp minced ginger
1/2 red bell pepper (thinly sliced)
1 cup cubed pineapple
8 shrimp
1 tbsp soy sauce
1 tbsp rice vinegar
1 tsp of sriracha (I love sriracha - add less or exclude if you don't)
1/2 cup cooked rice
1 tbsp cilantro
1/4 fresno chile (thinly sliced)
2 scallions (thinly sliced
1/2 lime (cut into wedges)
DIRECTIONS
Heat oil in skillet over medium heat
Add the onion, garlic, and ginger and saute about a minute
Add the bell peppers and pineapple and saute about 5 minutes (the peppers will soften - that's how you'll know its ready)
Add shrimp and cook until opaque throughout and vegetables are tender (about 3 minutes)
Stir in soy sauce, rice vinegar, and sriracha (if using) and simmer for 2 minutes
Put rice on plate, top with stir-fry, garnish with mint, cilantro, chile, and scallions
Serve with lime wedges
